Organic Tomato Salad
Tomatoes are a wonderful choice as summer approaches. ORGANIC PLEASE! Both tomatoes and cucumbers are known to pull toxins from the earth and can be used to help retain an organic garden certification. Alternating these crops as well as mustard greens, which are known for drawing metals out of the soil, are great additions to organic planning. During this process, these crops are sold as “pesticide free” until the soil is certified organic.
Charisma Cuisine’s Tomato Salad
• 4 ripe tomatoes sliced into bite-sized pieces
(I use heirloom tomatoes when possible.)

Stir gently, cover and chill for an hour to allow the flavors to mingle.
Serve with sprouted whole grain bread, crackers or over salad greens.
